Eating well should not be complicated

Dehydrating is the oldest way to preserve food, and it is still the best: it concentrates the flavour, keeps for months in the pantry, and needs nothing but warm air and patience. Open a jar in January and it still tastes like the August harvest.

5–8% moisture

The exact point where the aroma concentrates without drying out.

Our process

Six steps, forty degrees, zero rush

Our tunnels hold a constant temperature and a continuous airflow that draws out moisture gradually, with no fermentation and no additives.

01

Cleaning

Produce is cleaned and sorted before anything else.

02

Cutting

Uniform cuts so everything dries at the same rate.

03

Into the tunnel

Trays go into the hot-air drying tunnel.

04

40–45°C

Constant temperature throughout the whole process.

05

Airflow

A continuous flow carries away moisture and prevents fermentation.

06

Out at 5–8%

It leaves the tunnel once it reaches the optimal moisture level.
